Bone dry. Champagne Method. 100% organic apples from our Good Life Farm and our friends at Hemlock Grove in Danby. Rich from extended lees contact and highly bubbly. Clove, lemon curd, black pepper and cardamom., fresh buttered bread.

Funkhouse ‘17 Bone dry. Champagne method. Silky and buttery from a malolactic fermentation with a creamy mouthfeel. (ABV 8.4%) Glass 6 / Bottle 17
Greenman Pet Nat '18
Pétillant Naturel (or Pét-Nat) is a simple and elegant way to produce naturally sparkling cider. Ours is an un-filtered raw expression of apples through a low intervention, early cider. (ABV 8.4%) Glass 7 / Bottle 19
Cazenovia ‘17 Offdry. Champagne Method. Baked apple aromas. Notes of cardamom, ginger, bayleaf, and nutmeg. Ripe pear and a structured rolling tannic finish with a touch of ice cider. (ABV 8.4%). Glass 7 / Bottle 18
Baldwin '18 Dry. Sparkling. Bright, tropical fruit, with bracing acidity. Pineapple, lime and notes Riesling, ending with a dry,

Northern Spy ‘17 Semi-dry. Method Charmat. Fresh, ripe fruit, honeydew, mango and papaya. Well balanced acidity with a sweet reserve. (ABV 8%). On Tap 6 / Bottle 15

Royal Cider ‘17 Fortified dessert cider. A cold concentrated ice cider blended w/ young apple brandy. Aged in American oak. Unfiltered, unfined. (ABV 18%). Glass 8 / Bottle 28
Pommeau ‘16 Still. Our cider custom distilled at Finger Lakes Distillery. Blended with russet and bittersweet juice, aged in American Oak. (ABV 20%) Glass 8 / Bottle 22
Persici '17 Still. An eau de vie- apple brandy- steeped with organic Good Life peaches and aged in American Oak. Creamy nose with butterscotch, mint and flavors of summer. Creamy mouthfeel and a soft, buttery finish. (ABV 24%). Glass 8 / Bottle 25
Ginger Bear Sparkling. Like no other ginger soda- our own organic ginger, citrus and honey. On Tap 3 / Bottle 6

The tasting menu is arranged from bone dry all the way to sweeter ciders and ends with Ice Ciders and Pommeau. Each cidery is featured throughout the menu. Scattered throughout the menu are still ciders (no bubbles), traditional method ciders, bottle conditioned ciders and sparkling ciders.
